The variety in Peruvian cuisine reflects a long history, combining unique local ingredients with influences from Spanish, Chinese, Japanese, Italian, and Arab cultures. Event organizer Sylvia Dalmao notes this fusion began 5,000 years ago and has evolved through waves of immigration.
